We pride ourselves on a diverse selection of beers and that is true even within a specific beer style such as the IPA. Southern C’s is a throwback IPA. It’s inspired by the East coast brewers who tried English IPA’s and said let’s make them bigger and bolder.

While it’s crisp, it’s not dry like a West Coast IPA. The malt is in the passenger seat rather than the back seat and that shows in the rich color and flavors. The key with this style is to balance malt and hops and make sure they compliment each other. Make no mistake, it’s still an IPA and the hop aroma pops out of the glass and there is a solid bitterness and hop flavor that adds drinkability. Most importantly, it tastes like beer and not like fruit juice which is all too common now days.  We make a few IPA’s of this style and I’m glad we do. It’s an opportunity to showcase both NY grain and hops which can be amazing when used properly.
